I was inspired by the lack of apple cider donuts in my area. I live in coastal North Carolina, and while the western part of the state has orchards o’ plenty, we are pretty bare over here. This time of year, without fail, I see countless ladies in my local pages asking where they can get a warm apple cider donut. If you, too, lack a local apple orchard then this recipe is for you! No matter your location, everyone deserves to sink their teeth into a delicious apple cider donut cake during the fall season.

Ingredients

This delicious cake does not call for anything fancy, the only thing you probably don’t already have in your fridge and pantry is the apple cider. If you want to dress this up as an adult only cake, you can sub the apple cider with a hard cider of your choosing. Don’t have apple cider available near you just yet? You can sub apple sauce or apple juice. The rest of the ingredients consist of pantry staples like vanilla extract, brown sugar, flour, cornstarch, baking powder, baking soda, cinnamon, nutmeg, allspice, and salt. Next, just a few fridge ingredients! Eggs, butter, and sour cream.

How to Make Apple Cider Doughnut Cake

Take your eggs out of the fridge ahead of time, they need to be room temperature for best results. Add your dry ingredients to a medium bowl. Pour your apple cider into a small sauce pan. Reduce on medium to medium-high heat until half gone. Let cool in small bowl. Add your sour cream, melted butter, and sugar to the small bowl. Whisk together until sugar is dissolved. Next, pour mixture into the bowl of a stand mixer and add your eggs. Mix on low speed while adding the remaining ingredients (flour mixture), slowly. Mix until just combined, over mixing will lead to a tough, dry cake and nobody wants that! Pour batter into your greased or parchment paper lined oaf pan. Bake for 60-70 minutes, checking every 15-20 minutes. For best results, let cool on wire rack WHILE IN THE PAN for 15 minutes. Then remove and let cool as long as you’d like, or serve while still warm. Using a pastry brush, coat the cake with melted butter and gently roll in a cinnamon sugar mixture. Repeat this process until your desired amount of cinnamon sugar coating is reached. 

Storage

Store in an airtight container for up to two days on the counter, or up to a week in the fridge.

Apple Cider Cake Variations

You could use this recipe to make donuts instead of a loaf cake, I would bake at 350 for 10-15 minutes. Just monitor accordingly. For a stronger apple flavor, you can add diced apple chunks to the dough. Keep in mind, adding additional moisture means you may need to add additional baking time. Another way to get a stronger apple cider flavor is to create an apple cider glaze; add one cup apple cider to saucepan, reduce to half a cup. stir in 2 tablespoons butter, 1 teaspoon cinnamon, 1/4 teaspoon allspice, and 1/2 cup powdered sugar. Mix well and add additional powdered sugar until you reach desired thickness.

  • 1 tbs cinnamon
  • ½ cup sour cream heaping

Topping

  • 3 tbs butter melted
  • 1 tbs cinnamon
  • 1 tsp allspice
  • ¼ cup sugar
