dry ingredients

  • fresh blueberries, substitute frozen blueberries
  • fresh cherries
  • brown sugar
  • sugar
  • all purpose flour
  • baking powder
  • cornstarch
  • lemon zest optional

Crumb Topping Ingredients

  • granulated sugar
  • flour
  • melted butter

Equipment

Instructions

Pre-heat your oven to 350. Place paper liners in muffin pan. If using a stand mixer, combine wet ingredients in the bowl. If not using stand mixer, combine in large mixing bowl with whisk. Add dry ingredients to separate bowl then slowly add your flour mixture to your wet ingredients to create the muffin batter. Do not over mix! This is the most important step if you want to get the perfect texture. Over mix = tough muffin. Mix to just combine = moist muffins. I found the best way to avoid over mixing is to use a danish dough whisk. Using a fork, mix your crumb topping ingredients together in a small bowl. Set aside. Use a spoon or cookie scoop to fill your prepared muffin pan. Place crumb mixture on top, gently pressing down with fork. Place muffin pan in preheated oven and bake for 30-40 minutes. Let cool on wire rack before serving. Enjoy!
