Fluffy Sourdough Dinner Rolls| Same Day Recipe

Equipment

  • stand mixer

Ingredients

  • 430 g flour 
  • 250 g sourdough starter
  • 40 g honey (or 60 g sugar)
  • 150 g water 
  • 60 g melted butter

Instructions

  • Add the sourdough starter, water, and honey to the bowl of a stand mixer. Mix until milky in color.
  • Next, add your flour and melted butter.
  • Mix on low speed with a dough hook for 10-15 minutes. The dough should be very smooth and elastic.
  • Transfer to a lightly oiled bowl for fermenting. You can do a few sets of stretch and folds, but it is optional. 
  • Because this recipe uses a lot of starter, it is a same-day recipe. You want the dough to triple in size, which should take about 4-6 hours.
  • Next, turn your dough onto your clean working surface. Divide evenly into 10-14 pieces. 
  • Shaping- you can simply roll them into a ball, but I like to shape them as if they were mini boules (:
  • place in a baking dish, I use an 8×8 or 9×9 round or square. I like them to be pull apart style but if you don't want them touching use a bigger dish and spread them out by 2-3 inches.
  • cover and let rise for 1-2 hours. pre-heat oven to 350℉
  • brush the tops of the rolls with melted butter. bake for 25-28 minutes, until golden brown on top.
  • let cool for 15 minutes and enjoy!
